<p><strong>The Sun is &ldquo;HOT&rdquo;, the Champagne is good, and the wine&hellip;.</strong></p>
	<p>We finally have the heat the vineyards need if we are going to get the fruit ripe before November. &nbsp;With the cool Spring and late &ldquo;bloom&rdquo; it will be an interesting year. &nbsp;Our Ensemble Family is well and growing, with Bill and Michelle&rsquo;s recent marriage.&nbsp;</p>
	<p><strong><em>The Sun is &ldquo;HOT&rdquo;, the Champagne is good, and the wine something special&#8212;-A toast of thanks all around to our many friends and supporters.</em></strong></p>
	<p>Initial &ldquo;Dosage&rdquo; trials for our unique Blanc de Blancs Champagne took place recently. &nbsp;This &ldquo;Brut&rdquo; wine tastes beautiful, crisp and light, with tiny bubbles and a smooth texture. &nbsp;We will offer this wine exclusively to our Allocation List members next Spring. &nbsp;</p>
	<p>Our Cellar Rat, Melissa has been posting on our<strong> </strong><a href="http://www.facebook.com/pages/Walla-Walla-WA/Ensemble-Cellars/262441909311?ref=ts" target="_self"><strong>Facebook page</strong></a>. &nbsp;Become a fan and see what is going on at the winery, from her view. &nbsp;With her new driver&rsquo;s permit in hand she has been practicing her driving skills around the airport area, (with winemaker beside her&#8212;AHHH!!!).&nbsp;</p>
	<p><strong><em>Release Number Five</em></strong>, will be released October 2, 2010. &nbsp;This wine is showing well now and continues our trademark &ldquo;style&rdquo; of exotic spice and dark cherries framed by elegant French Oak tannins with a stylish, and long finish. &nbsp;If you are on our Allocation List for Release Number Four you are automatically signed up for the same quantity of Release Number Five. &nbsp;You will be contacted in the fall to make arrangements for pickup or shipment.&nbsp;  </p>

Now blending trials begin</strong></em>, finding just the right mix of barrels from the 2009 vintage (one of our best with bright/concentrated flavors). These are added to the current <em>Release Number Six and Seven</em> blends to get our trademark Bordeaux style, each release with three successive vintages.</div>

	<div>The bottling of a small amount of what will be a unique Blanc de Blancs Champagne, (methode Champenoise), was completed successfully. At some point in the next couple of years our Allocation List members will have the exclusive right to purchase the 80 or so cases made. Now we let the yeast do its work on the sugar in the bottle to make those little bubbles we love so much!</div>

	<div>As <strong><em>ENSEMBLE welcomes in 201</em></strong><em><strong>0</strong></em> we look forward to another successful year of making terrific wine, blending Three Vintages to produce that trademark Bordeaux Blend we all love.</div>

	<div>January is always a quiet month at the winery, with &ldquo;topping&rdquo; up barrels being the only &ldquo;physical&rdquo; activity happening. &nbsp;This is good for the winemaker, as his body has a chance to recover from crush. &nbsp;The 2009 vintage was one of our best at <strong><em>ENSEMBLE</em></strong>, with our many vineyards fruit coming in early, with bright/concentrated flavors and dark/rich colors. &nbsp;All wine is through Malic Acid conversion, racked, and now aging in barrels waiting for our Spring blending trials.</div>
	<div>&nbsp;</div>
	<div>The big news is that we crushed a small amount of Chardonnay to produce a unique Blanc de Blancs Champagne, (methode Champenoise). &nbsp;At some point in the next couple of years our Allocation List members will have the exclusive right to purchase the 80 or so cases made. &nbsp;So far, all looks good!</div>

			<content:encoded><![CDATA[	<p>It&rsquo;s now October 15 and the weather is just not cooperating, unseasonably cool (50&rsquo;s), with a few &ldquo;frozen&rdquo; nights in the low 30&rsquo;s. Many vineyards are &ldquo;crisping&rdquo; up with their leaf canopies no longer capable of ripening fruit. The good news is that the fruit we have in; including our merlots, cabernet franc, and two of our cabernet sauvignon blocks are potentially the best we have ever crushed. Time will tell. We expect to pick our last two Cabernet Sauvignon blocks in the next 10 days (our leaves are still functioning!).&nbsp;</p>
	<p><span class="Apple-style-span" style="font-weight: bold; ">Release Number Three NOW AVAILABLE</span>, for pickup or delivery, just download a <a href="http://www.ensemblecellars.com/order/OrderFormThree.pdf" target="_self">Release Number Three Order Form</a> or call the winery to make arrangements (509-525-0231). If you are on our ALLOCATION LIST you will be contacted to confirm your delivery and pickup information. The wine is showing off its exotic spice and dark cherry flavors with layered complexity and good balance.&nbsp;</p>
	<p>We still have room on our ALLOCATION LIST, so download our <a href="http://www.ensemblecellars.com/allocationlist/AllocationRequest.pdf" target="_self">ALLOCATION REQUEST form</a> and get signed up now for our future releases. We are keeping our production to around 400 cases so availability is extremely limited. If you are on our allocation list for Release Number Three you are automatically signed up for our future allocations. If you would prefer not to be on our ALLOCATION LIST, just call the winery and let us know.</p>
	<p>Don&rsquo;t forget our special &ldquo;Release Weekend&rdquo; November 7 and 8. We will be pouring our new Release Number Three as well as barrel sampling Release Number Four. Wonderful cheese and locally made chocolate treats will be served. If you cannot make it that weekend, just call and make an appointment whenever you get into town.</p>

The theme of exotic spice and dark cherry showing layers of complexity with our trademark juniper notes and elegant French Oak continues.  Almost 300 allocation requests have been received so far.  <strong><em>Release Number Three Allocations still are available, </em></strong>just complete and send/fax in the <a href="http://www.ensemblecellars.com/order/ThreeAllocation.pdf" target="_self">Allocation Request Form</a>.</font></p>

<h3>&#8216;07 CRUSH is now complete with record number of barrels filled with wine.</h3>
 <br /> All the &ldquo;sampling&rdquo;, &ldquo;picking&rdquo;,&ldquo;sorting&rdquo;, &ldquo;destemming&rdquo;, &ldquo;punch downs&rdquo;, and &ldquo;pressing&rdquo; is now over and we wait for our wine to go through malic to lactic acid conversion in barrel. We want to thank our many friends who made the trip to Walla Walla for &ldquo;Crush Camp&rdquo; bringing gourmet meals and their muscles to share with us. We needed the help!!<br /> Release Number Two is tasting smooth and beautiful right now, especially after decanting. We only have 100 cases left to sell so get your order in soon. The winery will be open for Holiday Barrel Weekend, November 30, December 1, and December 2 from 10:00AM to 4:00PM. This year we are adding a terrific Dark Chocolate treat to the fine cheese selection we have had for you in the past. We will pour Release Number Two from bottle and Release Number Three from barrel. This will be the only opportunity to taste Release Three before we bottle it early next year. Those attending will also be able to reserve an allocation of Release Number Three . We look forward to seeing you that weekend or any other time you can make the trip. Just call my cell&mdash;509-520-0807 to set up a tasting appointment.</p>
	<p> Release Three continues to improve; consisting of 66% Cabernet Sauvignon, 18% Merlot, 13% Cabernet Franc, and 3% Petit Verdot from the &rsquo;04, &rsquo;05, and &rsquo;06 vintages. This blend is more advanced than either Release Number One or Two were at this stage. The wine already shows beautiful complexity and richness, with more structure than our previous wines. We are aging this wine longer in barrel and in bottle, with an anticipated release date the first weekend in November, 2008.</p>
	<p> Those of you who have purchased, or do purchase, Release Number Two before it sells out, will be on our &ldquo;Allocation List&rdquo; for Release Number Three. Early next year those on the list will receive via e-mail and regular mail an &ldquo;Allocation Request Form&rdquo; giving them the opportunity to reserve the wine. 			<content:encoded><![CDATA[	<p>This spring we have enjoyed watching the response as tasters try Release Number Two for the first time.&nbsp; <em>Do I like it better than Release Number One?</em>&nbsp; Clearly from the same family, both wines exhibit rich dark cherry flavors framed by French Oak spice and well integrated tannins, but with different personalities.&nbsp; Just like my two daughters&#8212; different, but both lovely.</p>
	<p>We are moving rapidly through our 360 cases of Release Number Two, after a very successful April and May, including the recently concluded Spring Release Weekend here in Walla Walla.&nbsp; It was great seeing so many of our friends and new acquaintances as they tasted the wine and picked up their Allocations.&nbsp; As you probably already knew, <em>Release Number One</em> is sold out, although I understand <strong>Water to Wine</strong> in Gig Harbor has a few bottles left on the shelf.&nbsp; If you have not made arrangements to <em>pick up</em> or <em>have shipped</em> your &ldquo;allocated&rdquo; wine, please contact the winery at 509-525-0231.</p>
